RECIPE: Slow Cooker Bacon Ranch Chicken



Slow Cooker Bacon Ranch Chicken

Ingredients:


4 boneless skinless chicken breasts
4 tablespoon real bacon bits
1 teaspoon minced garlic
1 package ranch dressing mix
1 can cream of chicken soup
1 cup sour cream
Egg noodles
 

Directions: 

1. Place chicken in greased 5-6 quart slow cooker.
2. Combine bacon, garlic, ranch dressing mix, soup, and sour cream; mix well.
3. Pour over chicken in the crock pot. Cook on high 3-4 hours.
4. Shred the chicken using two forks.
5. Serve over cooked egg noodles.

I found this recipe online (see above link) and I'm going to change it up a little and adapt it to my families likes and give it a whirl. 
First off, 4 chicken breasts is way too much for us, so I'll cut it down to 2. We don't use store bought bacon bits, I make them as can be seen in a previous post (here), I'll use about 4 slices of bacon (leftovers from breakfast over the weekend) and whatever amount that comes out to be will be what I use. Garlic - I don't mince things, I use a hand grater and will use 2 cloves of garlic. I buy ranch by the bottle, in powder form, so I'll be using 3 tablespoons (give or take I hate measuring). Sour cream - I'll be using whatever is left over in the jar, I'm guessing it is about a cup but who knows, again I'm not measuring it out.
This says to cook on high for 3-4 hours. I plan on cooking it on low all day. Honestly, if I don't do it in the morning and let it go all day I won't remember to make it till it is too late and I'll have to figure out something else for dinner.
I will come back after we eat it and give a review as this has to cook for 3-4 hours. :-)


UPDATE:

So I made this and winged it just like I promised. Here's what I did. First of all, my slow cooker/crock pot is way bigger than 5-6 quarts, so don't let this scare you. Yes I did have burnt stuff on the edges of my crock pot but that's nothing that the other half can't fix when he washes the dishes (hahaha). 

Chicken - Like I stated before, I think 4 pieces of chicken is too much for my family, 2 adults, 2 kids and a toddler were eating tonight, so I used 2 and would say it was about a pound of chicken. 

Bacon - 4 slices of leftover bacon and made bacon bits. I will use more bacon next time!!!!

Garlic - I used 3 cloves and hand grated it in, I think I'll only use 2 or maybe 1 next time. The ones I picked off the bulb were huge and I should have known better but used them anyways.

Ranch - I used about 1 3/4 tablespoons of powdered ranch. I would say it could use more but wasn't a deal breaker.

Sour Cream - I knew there wasn't much left in the container but thought there was about a cup.... Bad idea, there was only 1/4 cup if that left in there but I used every last drop in there. I don't know what more sour cream would do to the dish as I think it tasted good.

Cream of Chicken soup - Used the whole can even though I cut the recipe in half because who wants to keep a half a can of cream of chicken soup?

I DID NOT grease the crock pot, why? Because I didn't read the entire directions, ooppss my bad. I mixed everything in the crock pot because I didn't feel a need to dirty another dish in the process of making this. I mixed it all in there and pushed it to the side with a spoon and put the FROZEN chicken breasts in and spooned the mixture over them. Turned the crock pot on and let it do its magic. Finally it was ready to be shredded! I did this and left it in there on the warm setting in hopes it would soak up some of the "sauce" that was left in there. Meanwhile I made medium wide egg noodles. The recipe picture showed it scooped on top of a pile of noodles. I decided to just mix the chicken in with the noodles in hopes I could trick the kids into eating more chicken in case they didn't like it.

The end result vote was:
Me - YES
Other Half - YES
Kid 1 - Eh, I'd eat it again but only if I had to (Gave a sideways thumb)
Kid 2 - Yes, I'd eat it again but not every day (gave a thumbs up)
Toddler - Picked out the chicken and a few noodles.

While eating this with the noodles I thought that the chicken would taste amazing inside of a pot pie, which I have NEVER made before. With that said I plan on making this again and putting the chicken in a pot pie and see how it tastes. I will say that I did think it could use another dimension of flavor but all in all it was good, better than I expected!!!!
