In my search for healthier food and spending less on groceries, we are a family of 7, I've been experimenting with things I can make myself rather than buy them. In our family we LOVE bacon and bacon bits, we are getting our own pigs this year and I can't wait for the bacon from them. I set out to figure out how to make bacon bits. Sure it sounds easy but to get a good flavor and to get them to keep wasn't as easy as I had thought.
I decided is cut the bacon into 1/4-1/2 inch sections and fry them that way, we usually cut our bacon in half when cooking it because it fits in the pan better that way. I put the bits into the frying pan and seasoned them with fresh ground black pepper, I wasn't sure about how it would taste so I only threw in about 5 pieces to start. I removed the bits from the pan and put them on a paper towel and waited a few minutes and tries one. This was the moat delicious piece of bacon I'd had in a long time. I continued to fry the rest the same way, eating about half of what I cooked while making it, I couldn't resist it was that good.
I then waited for then to cool and become dry from dripping and put them on a paper plate and rolled a glass over them. I like my bits small so I did this a few more times and peppered them again. The end result was supposed to be Bacon bits for a while with freezing them BEFORE I crushed them but they were just that good that there weren't any left. I did however use some in the homemade baked potato soup I made while making the bacon bits. DELICIOUS!
All in all I believe I've found our new bacon bits :)
